ABOUT CHARLOTTE

Wanting to hold onto Cotswold life for as long as possible after graduating from university in Cheltenham, I decided to stay in the Spa town where I currently reside.

I often bear the brunt of my friends’ jokes when they find me in the kitchen with two types of sourdough proofing on the counter, giving my undivided attention to some pasta dough and the faint sound of chicken stock bubbling away on the hob.

The inspiration to cook comes from many directions, mainly from eating out and long weekends abroad, but as we all know 2020/2021 had other plans. Like many others, it (gladly) threw me into a completely different trajectory and I missed cooking for others so much over lockdown that I started selling homemade pasta kits and sauces to the people of Cheltenham using local, fresh ingredients. During this time I also trained at Leith’s School of Food and Wine where I learnt the secrets behind confident cookery and drew inspiration from different countries’ cuisines in the process of doing so. It must be said though, that I always return to Italian flavours as well as using the seasons to guide me and allow ingredients to shine.
